HOW TO USE:

  1. Prepare Your Work Area: Ensure you have a clean, stable surface, such as a cutting board, and that the area is clear of obstructions. Have a waste bin ready for trimmings.
  2. Position the Fish: Place the fish on its side. For optimal stability, you might want to hold the fish firmly with your non-dominant hand, or use a damp cloth beneath it to prevent slipping.
  3. Make the Initial Cut: Start by making a cut behind the fish’s gills, extending down to the backbone. Do not cut through the backbone entirely.
  4. Slice Along the Spine: Turn the blade and carefully slice along the top of the backbone, working your way from the head towards the tail. Maintain consistent pressure and let the blade’s flexibility guide it along the bone structure.
  5. Separate the Fillet: Continue slicing until the entire fillet is separated from the backbone and ribs. Repeat the process on the other side of the fish to remove the second fillet.
  6. Remove Skin (Optional): If you wish to remove the skin, place the fillet skin-side down on your cutting board. Hold the tail end of the skin firmly, and with a slight upward angle, slide the knife between the meat and the skin, working your way towards the other end.
  7. Clean and Store: Rinse your knife thoroughly after use and dry it completely before placing it back into its blade protector for safe storage.
